I’m in the kitchen with my BFF Kerrie making her famous Dump & Done Ramen Salad, adapted from Chrissy Teigen’s Cravings cookbook.
Dump & Done Ramen Salad
3 (3-ounce) packages of chicken-flavored ramen (or pork, if you prefer)
1 (12-ounce) package of broccoli slaw
2-3 shallots, thinly sliced
1 cup frozen peas
¾ cup corn kernels (from a can is just fine!)
½ cup sugar
⅓ cup vegetable oil
1 tbsp sesame oil
½ cup apple cider vinegar
1 cup roasted, salted sunflower seeds
Separate and set aside the seasoning packets from the ramen noodles. In a large bowl, crush the ramen noodles into small, bite-sized pieces. (Make sure you don’t have any big chunks.) Add the broccoli slaw, sliced shallots, frozen peas and drained corn, then toss it all together.
In another bowl (microwave safe), combine the sugar, vegetable oil, apple cider vinegar, sesame oil and the ramen seasoning packets. Mix it well and microwave on high for 1 minute.
Pour the hot dressing over the slaw/noodle mixture and toss. Refrigerate overnight.
Add the sunflower seeds just before serving. Enjoy!
